- Select a small barrel cactus.
- Remove spines and green outside layer with a sharp knife.
- Cut the pulp into 1-inch thick slices and soak overnight in cold water.
- Remove from water, cut into 1-inch cubes, and cook in boiling water until tender.
- Mix together the sugar, water, orange juice, and lemon juice, then add the cooked cactus.
- Cook slowly until nearly all syrup is dissolved, being careful not to scorch.
- Remove cactus from syrup, drain, and roll in powdered or granulated sugar.
- For colored candy, add vegetable coloring.
