Ingredients

  • 3 cups sugar
  • 1 cup water
  • 2 Tbsp orange juice
  • 1 Tbsp lemon juice

Instructions

  1. Select a small barrel cactus.
  2. Remove spines and green outside layer with a sharp knife.
  3. Cut the pulp into 1-inch thick slices and soak overnight in cold water.
  4. Remove from water, cut into 1-inch cubes, and cook in boiling water until tender.
  5. Mix together the sugar, water, orange juice, and lemon juice, then add the cooked cactus.
  6. Cook slowly until nearly all syrup is dissolved, being careful not to scorch.
  7. Remove cactus from syrup, drain, and roll in powdered or granulated sugar.
  8. For colored candy, add vegetable coloring.
