  • 3/4 c. mayonnaise
  • 1/4 c. drained capers plus 1 tsp. caper liquid

  • 2 tsp. freshly squeezed lemon juice
  • 1 1/2 tsp. minced garlic

Instructions

  1. Scrape the top three-quarters of the corn kernels off the cob into a bowl.
  2. Spread the kernels onto a piece of cheesecloth stretched over a frame.
  3. Place the cheesecloth with kernels in the sun to dry.
  4. Turn the kernels four times a day until all moisture has evaporated and they are very hard.
  5. Store the dried kernels in a bag or in a covered ceramic jar in a dry place.
