Carmelized Onions

Instructions
- Cut onions into a small dice or lyonnaise.
- Heat a large skillet over medium-high, add olive oil and butter.
- When butter is melted, and foam subsides, add onions.
- Sprinkle onions with salt.
- Cook, stirring, 15 minutes. Reduce heat to low.
- Continue cooking about 40 minutes, until onions are soft and golden.
- When the onions begin to dry, add wine or water. Do not burn!
- Deglaze and scrape the pan to dizzolve the browned bits.
- Remove from the heat.
- Season to taste with salt and black pepper
