Carmelized Onions

Ingredients

  • 3 pounds white onions or yellow, peeled and trimmed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 cup dry white wine sherry, or water
  • salt

Instructions

  1. Cut onions into a small dice or lyonnaise.
  2. Heat a large skillet over medium-high, add olive oil and butter.
  3. When butter is melted, and foam subsides, add onions.
  4. Sprinkle onions with salt.
  5. Cook, stirring, 15 minutes. Reduce heat to low.
  6. Continue cooking about 40 minutes, until onions are soft and golden.
  7. When the onions begin to dry, add wine or water. Do not burn!
  8. Deglaze and scrape the pan to dizzolve the browned bits.
  9. Remove from the heat.
  10. Season to taste with salt and black pepper
