Ingredients

  • 1 large angel food cake
  • 4 egg yolks
  • 4 egg whites
  • 1/2 cup sugar
  • 2 squares bitter chocolate
  • 1 envelope plain gelatin

Instructions

  1. Cut the angel food cake into 1-inch pieces.
  2. Beat egg yolks and sugar until well combined.
  3. Melt the bitter chocolate and add it to the egg mixture.
  4. Dissolve the plain gelatin in 1/3 cup cold water.
  5. Fill a cup with boiling water to activate the gelatin.
  6. Beat the egg whites until stiff peaks form and then fold them into the mixture.
  7. Blend in the cake pieces gently to incorporate.
  8. Pack the mixture into a spring-form or angel food cake tin.
  9. Refrigerate overnight to set.
  10. Serve chilled with whipped cream.
