Cheese stuffed cauliflower offers a delightful combination of tender cauliflower, gooey cheese, and crispy breadcrumb topping, making it a satisfying centerpiece for family dinners or gatherings.

Ingredients

  • 1 large head cauliflower
  • mild Cheddar or Colby cheese, cut into fingers
  • 1/4 cup Spanish olive oil
  • 1 cup Italian bread crumbs
  • salt

Instructions

  1. Cook the cauliflower in boiling salted water until tender but still firm.
  2. Drain the cauliflower.
  3. Place the whole cauliflower head in a shallow baking pan.
  4. Press cheese sticks into the cauliflower all over the head.
  5. Sprinkle with salt and pepper.
  6. Mix olive oil and bread crumbs, then press the mixture onto the cauliflower.
  7. Bake at 350°F for 20 minutes or until crumbs are lightly brown.
  8. Cut into wedges to serve.
