Ingredients

  • 3 (6-inch) French bread rolls
  • olive oil
  • 7 oz. feta cheese
  • coarse ground garlic powder with parsley
  • 3 small tomatoes
  • 1 1/2 Tbsp. chopped fresh mint
  • lettuce leaves
  • fresh mint sprigs
  • 1 1/2 Tbsp. balsamic vinegar

Instructions

  1. Preheat the broiler and line a baking sheet with parchment paper.
  2. Brush the cut sides of each bread roll with olive oil.
  3. Broil the rolls 6 inches from the heat for 2 minutes until lightly browned.
  4. Remove from oven and evenly distribute the crumbled feta cheese on each roll.
  5. Sprinkle each with coarse ground garlic powder with parsley.
  6. Top the cheese with chopped tomatoes.
  7. Drizzle with balsamic vinegar.
  8. Sprinkle chopped fresh mint over the tomatoes.
  9. Serve on lettuce leaves and garnish with fresh mint sprigs if desired.
