Cherokee Chicken

Ingredients

  • 1/4 c. vegetable oil
  • 2 Tbsp. butter or margarine
  • 1 frying chicken, disjointed (about 3 lb.)
  • 1 green pepper, minced
  • 1 garlic clove, minced
  • 2 Tbsp. minced onion
  • 2 Tbsp. sweet vermouth
  • 1 (8 oz.) can whole cranberry sauce
  • salt and pepper to taste

Instructions

  1. Heat oil and butter in a 12-inch skillet.
  2. Add chicken; cook until golden brown on all sides.
  3. Pour off all but 2 tablespoons fat.
  4. Add green pepper, garlic and onion; cook until soft.
  5. Add vermouth, cranberries, salt and pepper.
  6. Cover; simmer 25 minutes. Makes 4 to 6 servings.
