Ingredients

  • lemon juice
  • cantaloupe
  • cream cheese
  • pecan halves
  • cherry gelatin
  • no-cal raspberry syrup
  • no-cal raspberry syrup

Instructions

  1. Spray a 6 1/2 cup mold with Pam to prevent sticking.
  2. Dissolve cherry gelatin in hot water according to package instructions.
  3. Add lemon juice and no-cal raspberry syrup to the gelatin mixture and stir well.
  4. Chop cantaloupe into small pieces and fold into the gelatin mixture.
  5. Cream the cream cheese until smooth and fold into the gelatin mixture.
  6. Pour the mixture into the prepared mold and refrigerate until set, about 4 hours or overnight.
  7. Unmold onto a serving plate and decorate with pecan halves before serving.
