Chicken Breasts Cilantro

Ingredients

  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • 1 teaspoon honey
  • 4 boneless skinless chicken breast halves
  • 1 cup finely crushed tortilla chips
  • 1 (16 ounce) jar salsa
  • 2 tablespoons minced fresh cilantro
  • 1/3 cup shredded monterey jack cheese

Instructions

  1. Combine lime juice, oil, and honey in shallow dish.
  2. Dip chicken in lime mix.
  3. Coat chicken with tortilla crumbs.
  4. Place in ungreased 11x7 baking dish.
  5. Bake, uncovered at 350* for 25 minutes.
  6. Mix salsa and cilantro.
  7. Pour over chicken.
  8. Sprinkle with cheese.
  9. Bake for 6 minutes more.
