- Heat oil in a large nonstick skillet over medium-high heat. Add onion; cook, stirring frequently, until onions start to brown, about 3 minutes.
- Add corn and chilies.
- Cook, stirring frequently, 5 minutes.
- Remove skillet from heat and sprinkle cheese evenly over corn.
- Cover and let stand 5 minutes to melt cheese.
- Makes 4 servings.
