Choco-Mint Meringues

Ingredients

  • 3 egg whites
  • 1 tsp. white vinegar
  • 1 c. sugar
  • 1/4 tsp. mint flavoring
  • 12 oz. semi-sweet chocolate morsels (use mint morsels if available)
  • green food coloring

Instructions

  1. Preheat oven to 375°.
  2. Beat egg whites and vinegar for 10 minutes and gradually add sugar.
  3. Mixture should get stiff and form soft peaks.
  4. Add mint flavoring and a few drops of green food coloring to get a light green color.
  5. Stir in the chocolate morsels.
  6. Drop from a teaspoon on an ungreased cookie sheet (easier if the cookie sheets are covered with aluminum foil).
  7. Put in oven and turn off heat.
  8. Leave for 4 hours.
  9. Makes 85 to 100 cookies.
