Chocolate Mint Swirl

Instructions
- Whisk the cream in a large bowl until standing in peaks.
- Fold in the marscapone and sugar, then put 1/3 of mixture into a smaller bowl.
- Stir the creme de menthe into the small bowl.
- Stir the melted chocolate into the large bowl.
- In serving glasses, place alternate spoonfuls of the creme de menthe and chocolate mixtures.
- Swirl to give a decorative effect.
- Chill until ready to serve.
- To make piped chocolate garnish, melt a small amount of chocolate and place in a paper pastry bag.
- Pipe squiggles and shapes onto a piece of baking parchment.
- Let the chocolate set, then carefully remove from the parchment.
- Place the piped garnish upright in each dessert and serve.
