Ingredients

  • 2 lb. pork roast (no more)
  • 1 lb. pinto beans
  • 2 cloves garlic, minced
  • 2 Tbsp. chili powder
  • 1 Tbsp. cumin seed or powder
  • 1 tsp. oregano
  • 1 Tbsp. hot sauce (picante or Tabasco, etc.)
  • salt to taste

Instructions

  1. Put pork roast and pinto beans in large pot and cover with water.
  2. Add remaining ingredients.
  3. Cook at least 8 hours over low heat.
  4. Serve in individual bowls over corn chips or Doritos or Fritos.
  5. On top, put grated cheese, shredded lettuce, diced tomatoes, chopped onion and hot sauce.
