Chutney Roasted Pork

Ingredients

  • 1 jar chunky spicky chutney
  • 1 tsp. salt
  • 1 tsp. dried oregano
  • 3/4 tsp. garlic powder
  • 1/2 tsp. freshly ground pepper
  • 3 lb. boneless pork loin trimmed
  • cooking spray

Instructions

  1. Preheat oven to 425 degrees.
  2. Melt chutney in microwave.
  3. Combine salt, oregano, garlic, and pepper. Rub evenly over pork.
  4. Place pork on a rack coated with cooking spray. Place in a shallow roasting pan.
  5. Bake at 425 for 30 minutes then spread chutney evenly over pork.
  6. Bake until thermometer registers 145. - approx. 1 hour and 15 minutes.
  7. Let stand 10 minutes before slicing.
