Chutney Roasted Pork

Instructions
- Preheat oven to 425 degrees.
- Melt chutney in microwave.
- Combine salt, oregano, garlic, and pepper. Rub evenly over pork.
- Place pork on a rack coated with cooking spray. Place in a shallow roasting pan.
- Bake at 425 for 30 minutes then spread chutney evenly over pork.
- Bake until thermometer registers 145. - approx. 1 hour and 15 minutes.
- Let stand 10 minutes before slicing.
