Citrus Black Beans

Ingredients

  • 1 cup cooked black beans
  • 1/2 cup orange juice
  • 1 bell pepper; half julienne
  • 1 lime
  • 1/2 tsp lemon peel seasoning
  • 1/2 tsp ground coriander seed
  • 1 pinch salt and peppercorn melange
  • 1 vegetable oil; as needed

Instructions

  1. Marinate beans in orange juice for a couple hours.
  2. Drain.
  3. Heat oil in a large saute pan.
  4. Add bell pepper.
  5. Sweat until tender.
  6. Add beans.
  7. Toss.
  8. Add dried spices and a squeeze of lime.
  9. Toss.
  10. Sweat until beans are heated through.
  11. Serve with a lime wedge.
  12. Variations; Mojo, tequila, jalapenos, habanero, roasted bell peppers, tomatoes, corn, grapefruit, garlic, red onion, shallots, caramelized onions, sugar, vinegar, horseradish, honey, rum, vodka, gin, bacon, cilantro, chives, scallions, goat cheese, sweet potatoes, beer, pearl onions
