Clamato® Cooked Salmon

Ingredients

  • 3 tablespoons olive oil
  • 1 medium red onion, diced
  • 2 cloves garlic, sliced
  • 1 fresh jalapeno chile, seeded and minced
  • 1/2 bunch cilantro, chopped fine
  • 1/2 bunch basil, chopped fine
  • 2 limes, juiced
  • 1 1/2 cups Clamato(R) Tomato Cocktail
  • Salt and pepper to taste

Instructions

  1. In a large skillet, over medium-high heat; heat olive oil, add onions, garlic, jalapeno, cilantro; basil cook 3-5 minutes. Add limes juice, Clamato(R); bring to boil. Reduce heat, cover and simmer slowly.
  2. Season salmon fillets with salt and pepper, place in Clamato(R) broth; cook fillets 9-12 minutes. Serve with white rice and vegetables.
