Classic Red Cabbage

Ingredients

  • 1 tbsp sunflower oil
  • 1 None onion, peeled and cut into strips
  • 2 None cinnamon sticks
  • 3 1/3 lb red cabbage, cut into wedges
  • 1 cup dry red wine
  • 1 cup vegetable stock
  • 4 tbsp red currant jelly
  • 2/3 cup gingerbread cookies, crushed
  • 1 None apple, cored and diced

Instructions

  1. Heat the oil in a pan and saute the onion until translucent, stirring occasionally. Add the cinnamon sticks and red cabbage, saute briefly then pour in the red wine and vegetable stock. Bring to a boil. Season to taste then add the red currant jelly. Cover and simmer for about 30 mins. Add the crushed gingerbread cookies along with the apple and simmer for another 10 mins.
