Coconut-Chocolate Logs

Ingredients

  • 2 c. chocolate chips
  • 1 Tbsp. vanilla
  • 1/4 tsp. salt
  • 1 c. coconut
  • 2/3 c. evaporated milk
  • 4 1/2 c. confectioners sugar

Instructions

  1. Melt chocolate chips with milk over hot water; remove from heat.
  2. Add vanilla, salt and confectioners sugar.
  3. Chill mixture until firm enough to shape, approximately 1 hour.
  4. Place half of mixture between sheets of wax paper and shape into a log.
  5. Repeat with remaining mixture.
  6. Now roll logs in coconut until heavily coated.
  7. Wrap in wax paper and chill until ready to slice.
