Cold Parsleyed Ham

Ingredients

  • 2 lb cooked ham
  • 1 pt well flavored chicken or veal stock
  • 1/2 cup dry white wine
  • fresh ground pepper
  • fresh ground nutmeg
  • 6 to 8 tablespoons fresh parsley chopped
  • 2 tablespoons gelatin

Instructions

  1. Trim any fat from ham and dice.
  2. Combine ham with stock, white wine, pepper, and nutmeg.
  3. Simmer gently for 5 minutes.
  4. Drain, reserving the stock and place ham in a wet glass bowl dusted with finely chopped parsley.
  5. Soften gelatin in a little water.
  6. Stir gelatin into hot stock and add remaining parsley and tarragon vinegar.
  7. Allow mixture to cool until syrupy.
  8. Pour over ham in the bowl, ensuring fluid covers the meat.
  9. Allow to set for 12 hours before unmolding.
  10. Slice and serve.
