Creoled Stewed Okra

Ingredients

  • 2 Tbsp bacon drippings
  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 2 large garlic cloves, minced
  • 3 medium tomatoes, peeled and chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp sugar
  • 1 tsp dried parsley
  • 35 medium okra pods, sliced into 1/2-inch slices
  • 1 1/2 cups chicken broth
  • 1/2 cup chickpeas
  • 2 Tbsp chopped coriander leaves
  • 3 flakes garlic, crushed

Instructions

  1. Soak the chickpeas in water for five to six hours.
  2. Pressure cook the soaked chickpeas with a little water until they are tender.
  3. Allow the chickpeas to cool and drain thoroughly.
  4. Blend the cooked chickpeas in a mixer until smooth, then add crushed garlic, chopped coriander leaves, chopped onion, lemon juice, and salt. Mix well.
  5. Refrigerate the chickpeas mixture for about an hour.
  6. Divide the mixture into patties and shape them accordingly.
  7. Heat oil in a skillet and shallow fry the chickpea patties until golden brown and cooked through.
  8. Meanwhile, in a separate pan, heat bacon drippings over medium heat.
  9. Add chopped onion, chopped green pepper, and minced garlic; sauté until softened.
  10. Stir in peeled and chopped tomatoes, salt, black pepper, cayenne pepper, sugar, and dried parsley; cook until tomatoes break down.
  11. Add sliced okra and chicken broth; simmer until okra is tender and flavors meld.
  12. Serve the okra stew hot, alongside the fried chickpea patties.
