Cold Trout

Ingredients

  • 2 c. Moselle wine
  • 1 c. water
  • 1 tsp. tarragon
  • 1 Tbsp. parsley
  • 4 whole dressed trout

Instructions

  1. Place wine, water, tarragon and parsley in a pan big enough for the trout.
  2. Bring to a boil and simmer for 10 minutes.
  3. Gently place trout in the simmering liquid and cook over a low fire for 10 minutes.
  4. Cool.
  5. Remove skeleton, chop into bite-size pieces, enjoy.
