Ingredients

  • 2 bunches collard greens
  • salt
  • water
  • 2 ham hocks
  • bacon drippings

Instructions

  1. Wash the collard greens thoroughly 2 to 3 times to remove sand.
  2. Remove and discard tough stems from the greens.
  3. Place ham hocks or ham chunks in a large pot.
  4. Add the greens to the pot and fill halfway with water.
  5. Bring the water to a boil, then reduce heat to simmer.
  6. Simmer uncovered for 2 1/2 to 3 hours until greens are tender and seasoned.
  7. Add salt to taste when serving.
  8. Remove greens from water and cut into bite-sized pieces with a sharp knife.
  9. Serve with pepper sauce or vinegar if desired.
