Ingredients

  • 5 lb. collards
  • ham hock or hunk of ham
  • 6 potatoes

Instructions

  1. Choose a large pot sufficient to hold collards and ham.
  2. Fill the pot about halfway with water.
  3. Add ham hock or a piece of ham to the water and bring to a boil.
  4. Cook for approximately 2.5 hours or until the collards are tender.
  5. Add the halved potatoes to the pot and cook for an additional 30 minutes.
  6. Drain the cooked collards and cut them into bite-sized pieces.
  7. Optionally, stir in some bacon drippings to enhance flavor before serving.
