- Blanch green beans in boiling salted water for 2 mins, or until just tender. Drain then run under cool water to prevent further cooking.
- Coat a medium skillet with oil. Cook peppers, shallot and beans with Italian dressing and oregano for 2 mins, or until peppers are slightly tender and beans are warmed through. Season.
