Congealed Beets

Ingredients

  • 1 can beets
  • 1 small lemon Jell-O
  • 1/4 to 1/2 c. apple cider vinegar
  • 1/4 to 1/2 c. sugar

Instructions

  1. Drain beets.
  2. Reserve liquid.
  3. Mash or grate beets.
  4. Add water to juice to make 1 1/4 cups.
  5. Add vinegar and sugar to juice; heat to hot, but do not boil.
  6. Dissolve Jell-O in mixture.
  7. Add mashed beets.
  8. Grease pan with Pam.
  9. Pour mixture into pan and chill well.
