Cornmeal Casserole

Ingredients

  • 2 eggs
  • 1 stick melted butter or margarine
  • 1 small pkg. Jiffy cornmeal muffin mix
  • 1 can creamed corn or 1/2 cream-style and 1/2 kernel corn
  • 1 c. sour cream

Instructions

  1. Mix all together.
  2. Top with grated cheese (I use Cheddar cheese).
  3. Bake in a 350° oven for 1 hour or about 25 minutes in microwave.
  4. Sprinkle on more cheese just before finished baking.
