Cornmeal Pudding

Ingredients

  • 1 c. cornmeal
  • 1 qt. milk
  • 1 tsp. salt
  • 1 well beaten egg
  • 1 c. sugar
  • 1/2 tsp. allspice

Instructions

  1. Put milk in large saucepan and bring to a boil.
  2. Using low heat, slowly stir in cornmeal and let cook a few minutes, stirring constantly; add salt.
  3. Take off stove and let cool for a few minutes.
  4. Add milk to thin a little; then add one well-beaten egg, sugar and allspice.
  5. Pour into casserole and bake in a moderate oven about 35 minutes.
  6. Stir twice while baking.
