Ingredients

  • 10 lb. crabapples
  • 15 c. sugar
  • 5 c. cider vinegar
  • 5 c. water
  • 1 Tbsp. whole cloves
  • 2 tsp. cassia buds (optional)
  • 1 stick cinnamon

Instructions

  1. Wash crabapples; do not remove stems.
  2. Pickle crabapples as soon as possible after picking before they become mellow.
  3. Make a syrup by boiling sugar, cider vinegar, water, whole cloves, cassia buds (optional), and cinnamon for 3 minutes.
