Cranberry Fruit Pudding

Ingredients

  • 3 cups cranberries
  • 1 12 cups water
  • 23 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons orange juice
  • nonfat vanilla yogurt, for topping

Instructions

  1. Place cranberries and water in a medium saucepan.
  2. Bring to a boil over medium heat.
  3. Reduce heat to medium-low and simmer uncovered for 15 minutes.
  4. Press cranberries through a strainer into a bowl.
  5. Discard skin and seeds.
  6. Return cranberry mixture to saucepan.
  7. Stir in sugar.
  8. Combine cornstarch and orange juice in a small bowl, stirring to dissolve cornstarch.
  9. Stir into cranberry mixture.
  10. Bring to a boil over medium heat, stirring constantly.
  11. Continue to cook and stir for 2 minutes.
  12. Divide mixture evenly into six custard cups or small bowls.
  13. Chill.
  14. Serve cold, by itself or topped with vanilla nonfat yogurt.
  15. Cooking time does not include cooling time.
