A luscious, creamy orange-flavored dessert with tangy mandarin oranges and smooth ice cream, perfect for a refreshing treat at gatherings or family dinners.

Ingredients

  • 1 pkg. orange flavored gelatin
  • 1 1/2 c. warm water
  • 1 1/2 c. mini-marshmallows
  • 2 c. vanilla ice cream or frozen yogurt
  • 1 (11 oz.) can mandarin orange segments, drained

Instructions

  1. Mix gelatin and warm water in a 2 1/2 to 3-quart microwavable bowl. Microwave on High for 1 1/2 minutes.
  2. Stir to dissolve the gelatin completely.
  3. Add mini-marshmallows; microwave for 1 to 1 1/2 minutes or until marshmallows are puffed and almost melted.
  4. Stir mixture slowly until marshmallows are completely melted and the mixture is smooth.
  5. Add vanilla ice cream or frozen yogurt to the mixture.
  6. Stir with a wire whisk until the ice cream is melted and well incorporated.
  7. Stir in drained mandarin orange segments.
  8. Pour the mixture into a 6-cup ring mold.
  9. Refrigerate for 45 minutes or until set.
  10. To unmold, dip the mold in hot water for 10 to 15 seconds.
  11. Gently pull the gelatin from the edges with moist fingers.
  12. Place a moistened serving plate on top of the mold.
  13. Invert the mold, holding it and the plate together.
  14. Shake slightly to loosen the gelatin from the mold.
  15. Gently remove the mold from the dessert.
