- Wrap grated potatoes in a tea towel and squeeze out excess moisture. Place in a large bowl and season to taste.
- Heat half butter and oil together in a large skillet on high. Spoon 1/4-cup portions of potato into pan, pressing to flatten.
- Cook 2-3 mins each side, until golden and crispy, adding extra butter and oil as required. Drain on paper towel. Repeat with remaining ingredients. Serve topped with avocado, sour cream, and caper berries.
