- Beat egg white in a saucer until spreadable.
- Add a few drops of water if needed to thin the egg white.
- Using a small paint brush, coat each surface of a mint leaf with a thin layer of egg white.

- Lay each coated leaf on the granulated sugar and sprinkle more sugar over it until evenly coated.
- Place the coated leaves on a cake rack covered with wax paper.
