Delicately crystallized mint leaves offer a sweet, aromatic treat perfect for garnishing desserts or enjoying as a refreshing snack, suitable for elegant occasions or casual indulgence.

Ingredients

  • freshly picked mint leaves
  • 1 egg white
  • few drops water
  • extra fine granulated sugar

Instructions

  1. Beat egg white in a saucer until spreadable.
  2. Add a few drops of water if needed to thin the egg white.
  3. Using a small paint brush, coat each surface of a mint leaf with a thin layer of egg white.
  4. Hold the leaves with tweezers for easier handling.
  5. Lay each coated leaf on the granulated sugar and sprinkle more sugar over it until evenly coated.
  6. Place the coated leaves on a cake rack covered with wax paper.
  7. Set the rack in a warm, dry place such as an oven with a pilot light and dry for several days.
  8. Store the crystallized mint leaves in layers separated by waxed paper and keep dry.
