Cucumber Lime Mold

Instructions
- Pour boiling water on gelatin in small bowl; stir until gelatin is dissolved.
- Stir in mayonnaise with fork until smooth. Refrigerate until slightly thickened, but not set, about 20 minutes.
- Stir in cucumber and onion; pour into 4 ounce mold or 6 ounce custard cup.
- Refrigerate until firm, at least 2 hours. Unmold on spinach leaves.
