Cucumber Lime Mold

Ingredients

  • 3 Tbsp. boiling water
  • 1/2 (3 oz. size) pkg. lime-flavored gelatin (about 1 Tbsp. plus 2 tsp.)
  • 1 Tbsp. mayonnaise or salad dressing
  • 1/2 medium cucumber, shredded and well drained
  • 1 tsp. finely shredded onion
  • spinach leaves

Instructions

  1. Pour boiling water on gelatin in small bowl; stir until gelatin is dissolved.
  2. Stir in mayonnaise with fork until smooth. Refrigerate until slightly thickened, but not set, about 20 minutes.
  3. Stir in cucumber and onion; pour into 4 ounce mold or 6 ounce custard cup.
  4. Refrigerate until firm, at least 2 hours. Unmold on spinach leaves.
