Cumin Basil Sweet Potatoes

Ingredients

  • 2 Sweet Potatoes
  • 2 tbs Dried Mediterranean Basil
  • 1/2 tsp Pepper (More or less to taste)
  • 1/2 tsp Salt (More or less to taste)
  • 1/2 tbs Cumin
  • A couple tbs frying oil of your choice (I use vegetable oil).

Instructions

  1. Wash and cube the sweet potatoes.
  2. Heat a non stick skillet on medium high, or just before the oil starts to bubble. Oil should not be smoking.
  3. Carefully slide in potatoes and reduce heat to medium. Move the potatoes around in the pan to coat them with the oil.
  4. Sprinkle the basil, cumin, salt and pepper on the potatoes, and fry until they are soft and a golden brown color.
  5. Enjoy!
