Curried Cherries

Ingredients

  • juice and pulp of 1 lime
  • 1 tsp. honey
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground cinnamon
  • 1 tsp. curry powder
  • 2 bay leaves
  • 2 c. fresh sweet cherries

Instructions

  1. In a small saucepan, combine lime juice and pulp, honey, ginger, cinnamon, curry and bay leaves.
  2. Heat over low heat until honey becomes liquid, then stir well to combine.
  3. Rinse and pit cherries. Add them, still wet, to the saucepan.
  4. Simmer over medium heat, stirring frequently, until cherries are slightly wilted and are well coated with curry mixture, about 5 minutes. Serve warm with roasted meat or poultry.
