Custardy Bread Pudding Recipe

Ingredients

  • 2 c. bread cubes
  • 2 1/2 c. lowfat milk
  • 3 tbsp. butter
  • 1/4 c. sugar
  • 3 Large eggs
  • Dash salt
  • 1/2 teaspoon vanilla

Instructions

  1. Use day old bread, crusts and all.
  2. Cut into 1/4 to 1/2 inch cubes.
  3. Place these into a buttered 1-qt baking dish.
  4. Scald lowfat milk with butter and sugar.
  5. Beat Large eggs slightly; add in salt.
  6. Stir into hot lowfat milk and vanilla.
  7. Set baking dish into a pan of warm water with water coming up to the level of the pudding and bake in a moderate oven (350 degrees) for about 1 hour or possibly till a small knife comes out clean when inserted in center of pudding.
  8. You can also add in raisins with the other ingredients if you like.
  9. Makes 4-6 servings.
  10. A good added touch - sprinkle top of custard with nutmeg before baking.
