Ingredients

  • 1/2 cup large tapioca
  • 1 1/2 cup water
  • 2 eggs
  • 1/2 cup sugar
  • 1 quart milk
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon almond extract

Instructions

  1. Soak tapioca in water overnight or for a couple of hours.
  2. In a saucepan, beat the eggs well.
  3. Add sugar to the eggs and continue beating until blended.
  4. Pour in the milk and mix thoroughly.
  5. Stir in the soaked tapioca and water.
  6. Cook the mixture, stirring constantly, until it thickens and comes to a boil, about 3 to 5 minutes.
  7. Remove from heat.
  8. Add vanilla extract and almond extract (or a mixture of almond and lemon extracts).
  9. Cool and serve.
