Ingredients

  • eggplant
  • chopped onions
  • mayonnaise
  • Parmesan cheese

Instructions

  1. Cut eggplant crosswise about 1/2-inch thick.
  2. Soak slices to cover in cold salted water for 20 minutes; drain well.
  3. Spread each slice generously with mayonnaise and top with lots of chopped onions.
  4. Place on cookie sheet and bake at 300° for 20 minutes. Remove from oven and sprinkle each slice with Parmesan cheese. Broil until golden.
