- Scrub the potatoes and pierce with a fork.
- Place on a piece of paper toweling in the microwave oven or on a microsafe plate. Microwave on High power for about 12 minutes, until the potatoes yield to gentle pressure.
- Let stand 3 to 5 minutes.
- Cut a thin lid off the top of each potato.
- With a melon baller, scoop out the flesh, leaving a 1/4-inch shell inside the potato skin.
