Deviled Baked Potatoes

Ingredients

  • 4 medium sized baking potatoes
  • 1/4 c. butter, softened
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/4 tsp. paprika
  • 1/3 c. sour cream
  • 4 thin slices Cheddar cheese
  • chopped fresh chives or parsley for garnish

Instructions

  1. Scrub the potatoes and pierce with a fork.
  2. Place on a piece of paper toweling in the microwave oven or on a microsafe plate. Microwave on High power for about 12 minutes, until the potatoes yield to gentle pressure.
  3. Let stand 3 to 5 minutes.
  4. Cut a thin lid off the top of each potato.
  5. With a melon baller, scoop out the flesh, leaving a 1/4-inch shell inside the potato skin.
