Ingredients

  • 2 eggs, separated
  • 2 cups milk
  • 3 tablespoons tapioca
  • few grains salt
  • 1 1/2 teaspoons liquid sweetener
  • 1/2 teaspoon vanilla

Instructions

  1. Separate the eggs into yolks and whites.
  2. Beat the egg whites until stiff but not dry.
  3. In a saucepan, mix the slightly beaten egg yolks with the milk.
  4. Add tapioca and a few grains of salt to the mixture.
  5. Cook over low heat or in a double boiler, stirring constantly, until the mixture comes to a boil.
  6. Remove from heat and let cool.
  7. Add the liquid sweetener and vanilla to the cooled mixture.
  8. Gently fold in the beaten egg whites until well combined.
  9. Serve the pudding in individual portions.
