Ingredients

  • 1 (16 oz.) can pumpkin
  • 2 tsp. vanilla
  • 1 c. 2% milk or skim milk
  • 4 egg whites
  • 1 Tbsp. pumpkin pie spice

Instructions

  1. Mix all ingredients in a bowl until well mixed.
  2. Pour into an 8 x 8-inch baking dish.
  3. Bake at 350° until set, 45 minutes to 1 hour or until a knife inserted in center comes out clean.
  4. Chill; when cool, cut into squares and serve with 1 tablespoon low fat Cool Whip.
