- Mix vinegar, sugar and spices in a large pan.
- Peel the cucumbers and cut into quarters (lengthwise).
- Remove seeds from cucumbers (a grapefruit spoon is ideal for this job!).
- Cut the extra long pieces in half.
- Add the cucumbers to the vinegar-sugar mixture.
- Bring to a boil and cook for 10 to 15 minutes or until they seem a little soft (being careful not to overcook them as they will become mushy).
- Pack in jars and cover with hot liquids. Seal.
