- Combine sugar, salt, dry yeast, water, and eggs in a bowl; mix 2 minutes on low speed of electric mixer and set aside.
- Combine flour with remaining sugar in a large mixing bowl; mix 3 minutes with electric mixer at medium speed.
- Add the yeast mixture to the flour mixture and mix well at medium speed.
- Cover the dough and let it rise in a warm place until it has doubled in bulk.
- Punch the dough down, cover, and refrigerate overnight.
- Shape the dough into desired rolls and brush with melted butter.
- Let the shaped rolls rise in a warm place (85°F), free from drafts, about 2 hours, or until doubled in bulk.
- Bake at 400°F until golden brown.
