Ingredients

  • roast or thick round steak
  • salt
  • pepper
  • red pepper
  • barbecue sauce

Instructions

  1. Cut the meat into strips 1 to 1 1/2 inches wide.
  2. Trim off all fat from the meat.
  3. Layer the meat in a bowl, adding salt, pepper, red pepper, barbecue sauce, and hickory seasoning as you go.
  4. Cover and refrigerate the meat overnight to marinate.
  5. Blanch the meat strips in hot water for 15 to 20 seconds.
  6. Place the meat strips on a cookie sheet.
  7. Set the oven to the lowest temperature setting.
  8. Leave the oven door ajar during cooking.
  9. Cook the meat for 8 to 16 hours until it turns black.
  10. Allow the jerky to cool before storing it in a sealed jar.
