- Cut the meat into strips 1 to 1 1/2 inches wide.
- Trim off all fat from the meat.
- Layer the meat in a bowl, adding salt, pepper, red pepper, barbecue sauce, and hickory seasoning as you go.
- Cover and refrigerate the meat overnight to marinate.
- Blanch the meat strips in hot water for 15 to 20 seconds.
- Place the meat strips on a cookie sheet.
- Set the oven to the lowest temperature setting.
- Leave the oven door ajar during cooking.
- Cook the meat for 8 to 16 hours until it turns black.
- Allow the jerky to cool before storing it in a sealed jar.
