Eggplant With Cheese

Instructions
- Preheat oven to 350°.
- Peel and slice eggplants about 1/4-inch thick rounds.
- Soak in salted water 20 minutes and drain.
- Cover with boiling water and drain immediately.
- Pat eggplants dry. Melt butter in a frying pan and saute eggplants 2 minutes on each side.
- Place one layer in a buttered baking dish; top with half of the cheese and sprinkle with pepper.
- Repeat the layers once more. Bake 30 minutes.
- Serves 4.
