Eggplant With Cheese

Ingredients

  • 2 medium eggplants
  • 1/2 c. butter
  • 8 oz. thinly sliced Swiss cheese
  • freshly ground pepper

Instructions

  1. Preheat oven to 350°.
  2. Peel and slice eggplants about 1/4-inch thick rounds.
  3. Soak in salted water 20 minutes and drain.
  4. Cover with boiling water and drain immediately.
  5. Pat eggplants dry. Melt butter in a frying pan and saute eggplants 2 minutes on each side.
  6. Place one layer in a buttered baking dish; top with half of the cheese and sprinkle with pepper.
  7. Repeat the layers once more. Bake 30 minutes.
  8. Serves 4.
