Eggplant With Corned Beef

Ingredients

  • 1/2 can corned beef
  • 2 or 3 long eggplant
  • 1 small round onion, sliced

Instructions

  1. Slice eggplant diagonally in 3/4-inch thick pieces with two slits.
  2. Saute eggplant and onion in vegetable oil until limp.
  3. Add corned beef.
  4. Season with sugar and shoyu according to taste.
  5. A quick and easy meal, great with rice.
