Ingredients

  • 6 c. Elderberry juice
  • 1/2 c. lemon juice
  • 3 1/2 Tbsp. pectin
  • 2 tsp. citric acid
  • 9 c. sugar

Instructions

  1. Mix elderberry juice with 1 cup water to make 1/2 gallon of juice. Combine all ingredients in a large stockpot until well blended.
  2. Cook over low to medium heat until the mixture thickens.
  3. Pour the hot mixture into well sterilized hot jars (canning).
  4. Seal the jars with sterilized lids.
  5. Cover the jars with a small towel or dish cloths.
  6. Let stand until the next day.
  7. Jars are sealed when you hear a slight popping sound.
