Ingredients

  • 1 cup raw rice
  • 1 tablespoon salad oil
  • garlic
  • 1 (4 oz) can mushroom pieces and liquid
  • 2 cups hot water
  • 1 (1 1/4 oz) envelope onion soup mix
  • 1 1/2 cups peeled and chopped tomatoes
  • 2 teaspoons salt
  • 1/4 teaspoon oregano

Instructions

  1. Saute rice, garlic, and mushrooms in oil until rice begins to brown.
  2. Stir in hot water and onion soup mix.
  3. Add chopped tomatoes, salt, and oregano.
  4. Pour mixture into a casserole dish. Cover and bake for 35 minutes at 350°F.
