Ingredients

  • 1 gal. dill pickles
  • 5 lb. sugar
  • 1 c. tarragon vinegar
  • 2 Tbsp. whole cloves
  • 6 to 8 garlic cloves

Instructions

  1. Drain pickles and slice across into 1-inch thick pieces.
  2. Place the sliced pickles in an enamel dishpan or pot with ice for 1 hour.
  3. Remove and pat dry with paper towels.
  4. In a crock, layer pickles, then a mixture of sugar, cloves, and garlic, repeating until all ingredients are used.
  5. Pour tarragon vinegar over the layered ingredients.
  6. Cover and keep in a cool spot for one week.
  7. After a week, the pickles may be bottled or left in the crock indefinitely.
