Ingredients

  • 1 cup good quality olive oil
  • 1/4 cup red wine vinegar
  • 3 tablespoons dijon mustard
  • 1 shallot, minced
  • 2 tablespoons honey
  • 1 handful chopped fresh mint

Instructions

  1. whisk together all the ingredients except the olive oil.
  2. Once incorporated, slowly whisk in the olive oil so the dressing emuilsifies.
  3. Season with sea salt and fresh cracked pepper to taste and ENJOY!!
